Ever had a silly question like wondering whether the curry dish was named after curry leaves or if the curry leaf was named after curry? A quick search in Google actually found that the curry leaf has another name! Dang! It's called murraya koenigii. It's often used in curries and thus, it is generally called the curry leaf. Ah, it makes more sense now.
Curry leaf is my new love. It's aroma often brings a dish to the next level and it's not only good for making curry. You would probably be wondering if it is hard to find curry leaves in Melbourne. The answer is no. It's not hard at all. You can find them at most of the Asian grocers but guess what? They are sold in the Queen Victoria Market and even in Woolworths supermarkets!
This post is not about curry leaf although it is one of the key ingredients. Instead, I would like to share a quick and easy recipe to busy people like me who just want a quick home cooked meal instead of a take away. It makes a complete meal when served with rice and you get a balanced diet - protein, vegetable and carbohydrate.
Well, if you are looking to fix a quick dinner after a long day at work, you might want to give this recipe a go. It takes less than 30 minutes to prepare and cook even for a slow person like me.
Recipe:
(3-4 servings)
450g minced chicken
400g green beans
One handful of curry leaves
5 cloves garlic
2 shallots or 1 onion
6 bird eye chillies
2-3 tablespoon oil
1 tablespoon oyster sauce
Salt and pepper
Seasoning for minced chicken:
1 tablespoon oyster sauce
1 teaspoon light soya sauce
A few dashes of ground white pepper
Pinch of salt
1 tablespoon corn flour
1. Add all the minced chicken seasoning to the minced chicken in a bowl and mix well.
2. Cut garlic, shallots/onion, chillies and green beans and set them aside.
3. Heat the oil in a frying pan or a wok.
4. Stir fry garlic and shallots/onion until lightly brown.
5. Add in curry leaves followed by chillies. Stir fry for 1-2 mins or until you can smell the aroma from the curry leaves.
6. Add in minced chicken and stir fry.
7. When the chicken is almost cooked, add the green beans.
8. Season about 1 tablespoon of oyster sauce as well as salt and pepper to taste based on your liking. Stir fry until the green beans become light green and are cooked.
9. Serves with rice.
Suggestion: Add a fried egg to the meal to make it an 'eggcellent' meal!
Note: You can tweak the amount of seasoning based on your taste buds. The recipe serves only as a guideline.
