Simple salmon stir fry recipe

Fish is a vital source of omega-3 fatty acids and it's low in fat as well as high in protein. Hence, I ensure my family have fish at least once a week. Given that I'm not a fish person, salmon is probably the only fish I like as other fish species tend to taste fishy most of the time. Tasmanian Atlantic salmon is the kind of salmon I use to get. It's rich in essential vitamins and minerals as well as omega-3 fatty acids. Besides that, I found that it has the best texture among the salmon species. 

Simple salmon stir fry recipe

I created this recipe while I was trying to reproduce the seared Atlantic salmon from MissChu. Well, it didn't turn out like MissChu's but I kind of like my version more. It's the simplest salmon stir fry recipe I have cooked. It has the right balance of flavor and the lemon simply brings out the flavor in the salmon! If you're a busy bee and would like a quick healty meal at home, this is the recipe for you. 

Recipe: 

(2 servings)

400g fresh Tasmanian Atlantic salmon (skin off)
1 big onion
1/2 lemon
2 tablespoons oil (I used rice bran oil)

Marinade:
1 tablespoon oyster sauce
1 tablespoon sweet soy sauce (kecap manis)
1 teaspoon light soy sauce
A pinch of salt
1/4 teaspoon white pepper

1. Cut salmon into bite-size dices. 

2. Marinate diced salmon with the marinade for about 30mins. 

3. Heat oil in a frying pan. Add in onion and stir fry until the onion is soft.

4. Add in salmon together with the marinade. Stir fry until the salmon is almost cooked. 

5. Squeeze the juice of the lemon onto the salmon. Gently toss the salmon. 

6. Remove frying pan from the heat once the salmon is cooked. Do not overcook the salmon. 

7. Serve with rice while it's warm.

Butter garlic prawns recipe

Prawns are one of my favourite seafood. They are not only delicious but also nutritious as prawns are high in protein and low in fat. Prawns are a good source of omega-3 fatty acids too. However, you might want to reduce the intake for prawns if you're high in cholesterol.

It doesn't require too much of seasoning to cook prawns as they are naturally tasty. Besides that, almost any cooking methods work well on prawns but make sure you don't overcook them as overcooked prawns are tough.


Well, butter garlic prawns are quick and easy to cook. This yummy dish goes well with bread, pasta and even rice.

Recipe:

(2-3 servings)

20 large prawn cutlets with tails on
60g butter
1 whole garlic (about 10 cloves) - finely chopped
A bunch of coriander - finely chopped
A lemon wedge
Salt
Pepper

1. Melt butter in a frying pan. Add in garlic when it's hot and stir fry until lightly brown.

2. Add in prawns. Quickly stir fry until the prawns turn pink in color.

3. Season with salt and ground pepper to taste.

4. Mix in coriander, squeeze the lemon on the prawns and serve.

Home style easy three cup chicken recipe

Three cup chicken is a popular Taiwanese dish. The name always sounds interesting to me. Why three cups? Apparently it was because 3 cups of sauces were used to make this dish when it was first created. Well, this is a home style version where the chicken is stir fried. The traditional three cup chicken is cooked/simmered in a clay pot.

Home style easy three cup chicken recipe

Recipe:

(3 servings)

4 chicken thigh fillets
8 cloves garlic
8 slices ginger
A bunch of Thai basil leaves
1 tablespoon dark sesame oil
1 tablespoon shaoxing wine
Salt

Marinade for chicken:

1 tablespoon dark sesame oil
3/4 tablespoon soya sauce
3/4 tablespoon oyster sauce
3/4 sweet dark soya sauce (kecap manis)
Few dashes of pepper
1/2 tablespoon corn flour

1. Cut the chicken into small pieces and marinate with the marinade for 5 mins.

2. Heat frying pan or wok with sesame oil. Add in garlic, follow by ginger. Stir fry until the garlic is a bit brown.

3. Add in chicken and continue to stir fry.

4. Add shaoxing wine. Mix well.

5. When the chicken is about to cook, add in Thai basil leaves and add salt to taste.

6. Continue to stir fry until the Thai basil leaves are cooked. Dish out and serve with rice.

Easy Thai basil chicken (Gai Pad Grapow) recipe

Thai basil chicken a.k.a Gai Pad Grapow is a common dish in Thai restaurants. It is a dish where chicken is stir-fried with Thai basil leaves. I love this dish particularly the aroma of the Thai basil leaves. Please note that Thai basil is different from the usual basil. It is stronger and more distinctive in flavour. Thai basil is not hard to find in Melbourne. You can literally get it from Woolworths supermarket.

Easy Thai basil chicken (Gai Pad Grapow) recipe

Well, this is another quick dish you can cook when you’re too busy to serve up a feast! Just serve it with rice and some salad vegies and you’re done – quick and easy!

Recipe: 

(3-4 servings)

450-500g of minced chicken
5 cloves garlic
3 shallots
6 bird eye chillies
A bunch of Thai basil leaves

2-3 tablespoons oil
1 tablespoon fish sauce
3/4 tablespoon Indonesian sweet soy sauce (kecap manis)
3/4 tablespoon oyster sauce
Salt and pepper 

1. Chop garlic and shallots finely. Cut the chillies.

2. Heat oil in a frying pan or wok. Add garlic and shallots. Stir fry until lightly brown.

3. Add in chillies. Briefly mix.

4. Add in minced chicken; follow by fish sauce, sweet soy sauce and oyster sauce. Stir fry and mix thoroughly.

5. When the chicken is almost cooked, add in Thai basil leaves and stir fry until the Thai basil leaves are cooked.

6. Add salt and pepper to taste.

7. Serve with rice.

Stir fry minced chicken with curry leaves recipe

Ever had a silly question like wondering whether the curry dish was named after curry leaves or if the curry leaf was named after curry? A quick search in Google actually found that the curry leaf has another name! Dang! It's called murraya koenigii. It's often used in curries and thus, it is generally called the curry leaf. Ah, it makes more sense now.

Curry leaf is my new love. It's aroma often brings a dish to the next level and it's not only good for making curry. You would probably be wondering if it is hard to find curry leaves in Melbourne. The answer is no. It's not hard at all. You can find them at most of the Asian grocers but guess what? They are sold in the Queen Victoria Market and even in Woolworths supermarkets!

Stir fry minced chicken with curry leaves

This post is not about curry leaf although it is one of the key ingredients. Instead, I would like to share a quick and easy recipe to busy people like me who just want a quick home cooked meal instead of a take away. It makes a complete meal when served with rice and you get a balanced diet - protein, vegetable and carbohydrate.

Well, if you are looking to fix a quick dinner after a long day at work, you might want to give this recipe a go. It takes less than 30 minutes to prepare and cook even for a slow person like me.

Recipe:

(3-4 servings)

450g minced chicken
400g green beans
One handful of curry leaves
5 cloves garlic
2 shallots or 1 onion
6 bird eye chillies
2-3 tablespoon oil
1 tablespoon oyster sauce
Salt and pepper

Seasoning for minced chicken:

1 tablespoon oyster sauce
1 teaspoon light soya sauce
A few dashes of ground white pepper
Pinch of salt
1 tablespoon corn flour

1. Add all the minced chicken seasoning to the minced chicken in a bowl and mix well.

2. Cut garlic, shallots/onion, chillies and green beans and set them aside.

3. Heat the oil in a frying pan or a wok.

4. Stir fry garlic and shallots/onion until lightly brown.

5. Add in curry leaves followed by chillies. Stir fry for 1-2 mins or until you can smell the aroma from the curry leaves.

6. Add in minced chicken and stir fry.

7. When the chicken is almost cooked, add the green beans.

8. Season about 1 tablespoon of oyster sauce as well as salt and pepper to taste based on your liking. Stir fry until the green beans become light green and are cooked.

9. Serves with rice.

Suggestion: Add a fried egg to the meal to make it an 'eggcellent' meal!

Note: You can tweak the amount of seasoning based on your taste buds. The recipe serves only as a guideline.
